The diagram illustrates the process of how olive is produced. Overall, the process consists of several main stages, beginning with harvesting olives and ending with the storage of purified oil. Notably, throughout the process, olives are gradually transformed into oil through cleaning, smashing, malaxing, and pressing. Machineries are applied nearly in all stages.

The processes commences once olives are harvested from trees and collected in a special vat. Next, they are transformed to a cleaning phase where they are washed to remove dirt and leaves before being crushed into olive paste through an olive mill. In stage 4, the olive paste is slowly mixed in a malaxer at a temperature below 27°C.

Following this, the resulting mixture is sent to a centrifugalr press, where it is separated into two components: pomace (that can be processed further at refining factories) and oil. The remaining liquid is directed to a separation stage, where waste water is removed from the oil. Then, the oil undergoes a decantation stage eliminating any solids and water. In the final stage, the oil is delivered to the storage tanks for future use.
