It's simple German

eggs — 3 pcs.
cocoa powder — 30 g (2 tbsp. l.)
sugar — 75 g
wheat flour — 75 g
butter is used to lubricate the mold.

fresh (or frozen) cherries — 200 g
cherry tincture (or liqueur) — 50 ml
starch — 1 tbsp
sugar — 1 tbsp
water — 2 tbsp

heavy cream (33% and above) — 200 ml
powdered sugar — 50 g

black chocolate — 30 g
cocktail cherries — 6-10 pcs.

Beat the eggs thoroughly with salt and sugar for more than 6 minutes until foam forms.

Mix the dry ingredients — flour and cocoa.
Sift the dry ingredients through a sieve into a bowl with the eggs, gradually gently stirring with a silicone spatula to keep the dough airy.

Pour the dough into a detachable baking dish, greased with butter, and place in an oven preheated to 180 degrees. Bake the sponge cake for about 30 minutes, until cooked.
Place the cherries in a saucepan with a thick bottom, add sugar and boil over low heat.

Dilute the starch in water, add to the cherries and boil over low heat for 5-7 minutes until thickened. Cool, mix with cherry tincture (or liqueur). Separate the cherries from the juice — the cherry juice will be an impregnation for the cake.

Cut the cooled cake lengthwise into two or three pieces (depending on the height of the cake). Soak the cakes with cherry impregnation.
Beat the heavy cream with powdered sugar until it increases in volume and thickens with a mixer or in a food processor.

Put some of the whipped cream on the bottom cake, smooth it over the surface and lay a layer of cherries.
Cover with a second cake. Coat the entire surface of the Black Forest cake with cream.

Decorate the chocolate cake with cherries with cream of whipped cream, grated chocolate and cocktail cherries.
Before serving, be sure to let the sponge cake brew and cool in the refrigerator.
