▫️For the chowder
▫️20 to 25 clams
▫️1 cup water, for cooking, then reserve for chowder
▫️1 tbsp butter
▫️3 slices of pancetta or bacon, diced
▫️1 small onion, finely chopped
▫️Sprig of thyme
▫️1 bay leaf
▫️2 tsp flour
▫️1/4 cup milk
▫️1/3 cup heavy cream
