Lard has been used in traditional cooking for generations, but its nutritional profile is more nuanced than the simple label of “good” or “bad” fat.
🥓 What is lard?
Lard is essentially rendered pork fat, so it contains almost entirely fat, with virtually no protein or carbohydrates.
Its fatty-acid composition varies depending on the animal's breed, diet and processing, but it generally contains a mixture of:
🫒 Monounsaturated fat — the largest fraction in many lards
🧈 Saturated fat — present in significant amounts
🌻 Polyunsaturated fat — present in smaller amounts
Because the exact proportions vary, the numbers on one package shouldn't automatically be applied to all lard.
🔥 What about cooking?
Lard has a relatively high smoke point and can be useful for frying, roasting and other high-heat cooking methods. However, repeatedly overheating any cooking fat can produce undesirable oxidation products.
☀️ Vitamin D?
This claim needs context. Lard can contain vitamin D, but the amount can vary substantially depending on the animal's diet and exposure to sunlight. Lard should not be considered a reliable vitamin-D supplement.
🧠 Lard also provides small amounts of choline, a nutrient involved in normal liver function, cell membranes and neurotransmitter production.
❤️ The bigger picture matters.
Lard isn't automatically unhealthy — but it is still a concentrated source of calories and saturated fat. For cardiovascular health, replacing some saturated fat with unsaturated fats, particularly those found in foods such as olive oil, nuts, seeds and fish, is generally a better-supported strategy.
⚠️ And check the label. Some commercial products may contain added or partially hydrogenated fats. Choose products with a simple ingredient list and avoid partially hydrogenated oils.
✨ The takeaway: You don't have to fear traditional fats, but you also don't need to treat them as “superfoods.” The quality of your overall diet and the balance of different fat sources matter much more than any single cooking fat.
